Combine vinegar, a small amount of sugar, and dashi to prepare Sushi vinegar.Pour this over cooked rice, and mix gently. Use a fan as you mix the rice.

Cut a fish into thin slices. Grate wasabi.

Roll Sushi rice into an easy-to-eat size, and place wasabi and the ingredients on top of the squeezed rice. Gently press rice and the topping together.

4 Make Sushi rolls

Place a nori sheet on a bamboo rolling mat. Spread Sushi rice over the nori gently and evenly.Place the ingredients, and roll up using the bamboo mat.

5 Serve
